Eat What You Grow

The best part of late summer has to be when the work in the garden begins to appear on the dinner table. Simple ingredients and a grill are all that is needed. I am hardly a hard core nutritionist, but I do believe that getting away from processed foods is one of the keys to a healthy weight and happier digestive system. 

Many of my summer meals come off the grill or the smoker. Who wants to heat up the house anyway? Whether it is meat or vegetables, cooking this way is my favorite summertime method. Here are a couple of my go to dishes. 

Beef Kabobs 

FOR THE KABOBS:

  • 5 pounds Sirloin steak, cut into ~1-inch cubes
  • 2 bell peppers 
  • 1 red onion
  • 1-pound button mushrooms
  • skewers

FOR THE MARINADE:

  • ½ cup olive oil
  • 1/3 cup soy sauce
  • ¼ cup lemon juice
  • ¼ cup Worcestershire sauce
  • 1 tbsp garlic powder
  • 1 tbsp Italian seasoning
  • 1 tsp pepper
  • ½ tsp salt
  • Dash of hot sauce


Cucumbers with dressing:

  • 3 medium cucumbers 
  • Cherry tomatoes 
  • 1/2 sliced red onion
  • 1 cup mayo
  • 1/4 cup sugar
  • 1/4 cup white vinegar
  • 1/2 tsp salt
  • 1/2 tsp dill weed
  • Pepper to taste
